CHICKEN ALFREDO PASTA

(serves one)

INGREDIENTS

Boiled pasta (serving for one)

1 tbsp butter

200g chicken thigh, cubed

1/4 tsp dried oregano

3 cloves garlic, minced

1-1/2 cup cooking cream

1/2 cup parmesan cheese

Pepper, to taste

Salt, to taste

INGREDIENTS

  1. Boil pasta in lightly salted water until al dente.
  2. In a pan on medium high heat, melt butter.
  3. Add in chicken thigh (skin-side down). Season with salt, pepper and oregano.
  4. Once golden brown and cooked all the way through, remove from heat and set aside.
  5. In the same pan, add in garlic. Cook until aromatic.
  6. Add in cooking cream and cheese. Adjust as needed.
  7. Add in boiled pasta and mix thoroughly. You can add some pasta water to help emulsify the sauce to the pasta.
  8. Season accordingly.
  9. Add in cooked chicken and remove from heat. Serve.
